Ingredients:
- 1 large head of purple cauliflower
- 1/3 cup of grated aged Asiago cheese
- 1/2 teaspoon of freshly cracked black pepper
- 1 1/2 tablespoons of cold-pressed avocado oil
- 1/3 cup of toasted walnuts
- 1/3 cup of roughly chopped cilantro
Instructions:
- Preheat your oven to 400°F (around 200°C). Line a baking sheet with parchment paper.
- Cut the purple cauliflower into four 1-inch-thick steaks, ensuring a large flat surface area on each piece.
- Brush the flat sides of the cauliflower with avocado oil and place them on the prepared baking sheet, leaving space between each piece.
- Sprinkle one-third of the grated Asiago cheese and half of the black pepper over the cauliflower, gently pressing them into the surface.
- Bake for 15 minutes or until the cauliflower develops a golden crust, then carefully flip them over.
- Top the cauliflower with the remaining grated Asiago cheese and black pepper, then return to the oven for another 15 minutes or until the cheese is deeply golden.
- Serve the cauliflower steaks with toasted walnuts and garnish with chopped cilantro.
