Roasted Lemon Garlic Romanesco

Ingredients:

  • 1 head Romanesco, cut into florets
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Juice and zest of 1 lemon (approximately 2 tablespoons juice)
  • Salt and pepper, to taste

 Instructions:

  1. Preheaoven to 425°F (218°C).
  2. Trim leaves, rinse, and pat dry the romanesco. Cut florets from the stem, either leaving them whole or cutting into smaller pieces for quicker baking.
  3. Spread romanesco florets on a baking sheet. Drizzle with olive oil, sprinkle with minced garlic, and season with salt and pepper.
  4. Zest lemon over florets. Then squeeze lemon juice into a bowl, set aside.
  5. Place baking sheet in the oven and bake for 25-30 minutes until tender and slightly browned.
  6. Once done, remove from oven. Drizzle with lemon juice and season with salt and pepper to taste.
  7. Serve and enjoy!
