Parmesan-Crusted Purple Cauliflower

Ingredients:

  • 1 large head of purple cauliflower
  • 1/3 cup of grated aged Asiago cheese
  • 1/2 teaspoon of freshly cracked black pepper
  • 1 1/2 tablespoons of cold-pressed avocado oil
  • 1/3 cup of toasted walnuts
  • 1/3 cup of roughly chopped cilantro

Instructions:

  1. Preheat your oven to 400°F (around 200°C). Line a baking sheet with parchment paper.
  2. Cut the purple cauliflower into four 1-inch-thick steaks, ensuring a large flat surface area on each piece.
  3. Brush the flat sides of the cauliflower with avocado oil and place them on the prepared baking sheet, leaving space between each piece.
  4. Sprinkle one-third of the grated Asiago cheese and half of the black pepper over the cauliflower, gently pressing them into the surface.
  5. Bake for 15 minutes or until the cauliflower develops a golden crust, then carefully flip them over.
  6. Top the cauliflower with the remaining grated Asiago cheese and black pepper, then return to the oven for another 15 minutes or until the cheese is deeply golden.
  7. Serve the cauliflower steaks with toasted walnuts and garnish with chopped cilantro.
