Ingredients:
- 1 head Romanesco, cut into florets
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- Juice and zest of 1 lemon (approximately 2 tablespoons juice)
- Salt and pepper, to taste
Instructions:
- Preheat oven to 425°F (218°C).
- Trim leaves, rinse, and pat dry the romanesco. Cut florets from the stem, either leaving them whole or cutting into smaller pieces for quicker baking.
- Spread romanesco florets on a baking sheet. Drizzle with olive oil, sprinkle with minced garlic, and season with salt and pepper.
- Zest lemon over florets. Then squeeze lemon juice into a bowl, set aside.
- Place baking sheet in the oven and bake for 25-30 minutes until tender and slightly browned.
- Once done, remove from oven. Drizzle with lemon juice and season with salt and pepper to taste.
- Serve and enjoy!
