Ingredients:
- 1 head orange cauliflower, broken into large florets
- ⅔ cup all-purpose flour (spooned and leveled)
- ¼ cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon sea salt
- ¾ cup water
- Buffalo sauce, for coating
- Ranch, for dipping (optional)
Instructions:
- Preheat oven to 450°F (230°C). Line two large baking sheets with parchment paper to prevent sticking.
- In a large bowl, combine the cornstarch, onion powder, flour, garlic powder, smoked paprika, and sea salt. Pour in the water and whisk vigorously until the mixture forms a smooth batter. Add the cauliflower florets to the bowl, stirring gently until each floret is evenly coated.
- Using a fork or tongs, lift the cauliflower florets from the batter, remove any excess batter. Place coated cauliflower in a single layer on the prepared baking sheets. Bake for 10 minutes, then carefully flip each floret using a spatula. Rotate the baking sheets between oven racks to ensure even baking, and bake for an additional 10 minutes.
- After the initial baking period, remove the cauliflower from the oven and brush each floret generously with buffalo sauce. Return the baking sheets to the oven and bake for an additional 12 to 15 minutes, or until the cauliflower develops a dark, crispy exterior.
- When the cauliflower is done baking, take it out of the oven and optionally brush on more buffalo sauce. If desired, serve with a side of ranch and enjoy!
